The pie crust. I use a ready-made one that I can just roll out, and poke my fork in. It's relatively low fat, and doesn't have a lot of calories. If I make one myself I use a lot more flour, and thus it's more "expensive" calorie wise. You can use any kind you wish.
Fry minced beef. I use a kind I buy at my butcher's with less than 5% fat in it. Finely chop 1 onion and add it to the frying pan. Add taco spices (I use Santa Maria Tex Mex Taco Seasoning). You can also add corn nibblets if you want. I usually do but didn't have any left.
On top of the meat, add a layer of chopped tomatoes. Some prefer the chunky chopped ones, some chop their own. If you dice up your own tomatoes, do not use the insides. It will make the pie too runny. I use half a can of Mutti Polpa tomatoes. Use any kind you want, but as you can see, it's just covering the beef slightly.
This is a mixture of a box (3dl / 10 oz.) of creme fraiche (not the low fat kind), 2 tablespoons of mayonnaise, 1/2 tablespoon of ground pepper and finely chopped garlic cloves. I use 3 cloves, use as many as you prefer. :)
Sprinkle it with cheese, and put it in the oven. I use approximately 225C / 437F for 25-30 minutes.
Serve it with a salad, some croutons and a bit of sour cream. It is d e l i c i o u s! If you're thinking that this is a crazy unhealthy meal you're wrong! If you slice this pie into 8 pieces, each would have 384 calories - that's not bad!!Let me know if you try it, I'd love to hear if you like it!
